OnBoard Biryani

I had a cooking lesson today from an Omani boy who has never cooked before, but who got his Mum to write down the recipe for the trip!


In the morning I had boiled up a pan of rice in the pressure cooker, and then i had mixed some of that cheap minced beef you buy in packets that look like the dog meat I used to buy in the eighties, mixed with some onions, eggs and flour to make meatballs.
Sultan then fried up some onions and garlic, then added tomatoes, cumin, coriander and chilli. He stirred the rice into that, then served the meatballs on top. I tell you what, it was the best biryani I’ve ever had on a boat, and to make it culturally proper, we ate it with our fingers!

Oh, and thank goodness for the galley strap… you can’t see the heel in the photos cos we took them straight, but we were cooking in a ten foot swell…
